Far West Cuisine, located along Highway 20 in Chadron, offers an unprecedented blend of global flavors, serving up authentic Thai, Chinese, Mexican, and classic American dishes alongside a fresh, expanding sushi selection. In this edition of The Good Life Spotlight by the Northwest Nebraska Development Corporation (NNDC), we sat down with Far West Cuisine co-owner Kassie Barrera to learn more about how these flavors arrived in Chadron.

Humble Beginnings to a Chadron Staple

Co-owners Kassie and her husband first stepped into the restaurant industry in Missouri before following family ties to rural Nebraska. Drawn by a desire to run an independent, family-owned establishment, the couple initially opened a small café in nearby Harrison. Their reputation for bold, freshly prepared dishes quickly spread, attracting dedicated diners from across the county and prompting a move to Chadron.

Far West Cuisine officially opened its doors in Chadron in January 2019, settling into a prime location right off the main highway entering downtown. Occupying a historic location with a rich local restaurant legacy, the building’s unique charm reflects the welcoming atmosphere inside.

Four Cuisines, One Uncompromising Standard

What sets Far West Cuisine apart isn't just the sheer variety of its menu; it’s the care, precision, and scratch-made quality behind every dish.

Rather than overwhelming guests with an endless list of choices, the menu focuses on handcrafted, high-quality favorites from each distinct culinary tradition.

Guests can indulge in authentic Thai and Chinese entrées, including traditional stir-fries, noodle dishes, and signature sauces from scratch, born from years of hands-on culinary experience working directly with expert chefs in these culinary traditions. Local favorites include their wildly popular scratch-made crab rangoons and their signature pad Thai, which consistently draws rave reviews from first-time visitors and regulars alike.

Far West Cuisine’s Mexican menu is grounded in authentic family recipes that delivers Chadron residents bold, traditional spices among time-tested favorites. And crowd-pleasing American comfort food classics are consistently prepared with high-quality ingredients and the occasional culinary twist.

Relatively new to Far West’s menu is their freshly rolled sushi. What began as a modest selection of basic rolls has expanded into a full, dedicated sushi menu, offering the freshest sushi experience in the region.

Just about everything on the menu, from hand-trimmed meats and custom batters to complex house sauces, is prepared fresh to order in-house.

“What ties them all together is the care and preparation we put behind each meal,” Kassie says. “We really take our time on making sure that everything is done correctly and precisely.”

Resilient and Community-Driven

As a small, independent operation with a dedicated crew of around six employees, Far West Cuisine prides itself on genuine hospitality and strong community ties. Navigating early challenges through the support of local patrons, the restaurant continues to give back by offering dedicated discounts for students, school staff, and military personnel.

“During COVID, when dine-in restaurants had to become takeout, it was difficult,” Kassie says. “You really had to put it out there and do more advertising during that time to let people know ‘hey, we’re still here.’ But we were so grateful for the community. They really did support us a lot during that time. Community was and is what keeps us going.”
